Ingredients:

  • 3 large eggs

  • 2-3 links of pre-cooked turkey sausage

  • or 1/2 cup of crumbled turkey sausage

  • 1/2 green bell pepper, diced

  • 1/2 red bell pepper, diced

  • 2 slices of onion, chopped

  • 2 slices of celery, chopped

  • 1/2 cup of diced tomatoes

  • 1-2 teaspoons of Cajun seasoning (or to taste)

  • 1 tablespoon of butter or oil

  • Salt and black pepper to taste

  • Optional:

  • Shredded cheese (like Monterey Jack or cheddar)

  • fresh parsley

  • a dash of hot sauce for serving

  1. Cook the Sausage and Vegetables: In a medium nonstick skillet over medium-high heat, cook the turkey sausage, breaking it up into crumbles with a spatula. Cook until it is well-browned and no longer pink. Remove the sausage from the skillet and set it aside.

  2. Add the diced bell peppers, onions, celery, and tomatoes to the same skillet. Sauté until the vegetables are tender, about 3-5 minutes. Add the cooked turkey sausage back into the skillet and stir to combine.

  3. Prepare the Eggs: In a bowl, whisk the eggs with a pinch of salt, pepper, and Cajun seasoning until they are fluffy and well-combined. You can also add a tablespoon of water or milk to make the eggs even fluffier.

  4. Cook the Omelet: Melt the butter or oil in a clean nonstick skillet over medium heat, swirling to coat the pan. Pour the egg mixture into the hot pan.

  5. As the eggs begin to set, use a spatula to gently push the cooked edges toward the center, allowing the uncooked egg to flow underneath. Continue this process until the eggs are mostly set with a thin layer of uncooked egg on top.

  6. Add the Filling and Fold: Turn off the heat. Sprinkle the vegetable and sausage mixture over one half of the omelet. If using cheese, sprinkle it over the filling now.

  7. Using a spatula, fold the empty half of the omelet over the filled side. Let it cook for another minute or so, allowing the cheese to melt and the eggs to finish setting.

  8. Serve: Slide the omelet onto a plate. Garnish with fresh parsley or serve with a side of hot sauce if desired.

This Cajun Omelet pairs beautifully with a variety of sides and sips to make your meal feel complete. For a heartier breakfast or brunch spread, serve it alongside toasted baguette slices, warm pita chips, or crispy tortilla chips for scooping up every bite.
