THE CAJUN CRAB &
ARTICHOKE DIP
Prep Time: 15 minutes
Cook Time: 25 minutes
Yields: 6 - 8 servings
Ingredients:
8 oz cream cheese, softened
½ cup mayonnaise
½ cup sour cream
1 cup shredded mozzarella cheese
½ cup grated Parmesan cheese
1 can (14 oz) artichoke hearts, drained & chopped
8 oz lump crab meat (fresh or canned, drained well)
2 cloves garlic, minced
2 green onions, thinly sliced
1–2 tsp Cajun seasoning (adjust to taste)
½ tsp smoked paprika
Juice of ½ lemon
Salt & black pepper, to taste
Fresh parsley, chopped (for garnish)
Directions:
Preheat Oven: Preheat your oven to 400°F (200°C). Grease a medium-sized baking dish.
Sauté Aromatics: In a skillet over medium heat, melt the butter. Add the chopped onion and garlic and cook for 3-4 minutes, until soft.
Add Vegetables: Stir in the spinach and cook until wilted, about 2 minutes. Add the drained artichoke hearts and sauté until any excess water evaporates. Season with salt and black pepper.
Create the Base: Reduce the heat to low. Add the heavy cream (or sour cream) and softened cream cheese to the skillet, stirring until smooth and well combined.
Combine Ingredients: Remove the skillet from the heat. Gently fold in the crab meat, mozzarella cheese, half of the Parmesan cheese, Old Bay seasoning, paprika, cayenne pepper, lemon zest, and lemon juice. Stir until everything is well incorporated.
Bake: Transfer the dip mixture to your prepared baking dish. Sprinkle the remaining Parmesan cheese over the top.
Serve: Bake for 20-25 minutes, or until the dip is bubbly and the top is golden brown. Let it cool for a few minutes before serving.
