This Cajun Shrimp and Jollof Quinoa Bowl is one of my favorite ways to bring bold flavors together in a single dish. The smoky, spicy kick of Cajun-seasoned shrimp pairs perfectly with the rich, tomato-based depth of Jollof-inspired quinoa. It’s a bowl that’s vibrant, hearty, and full of soul—comforting yet energizing, and always satisfying from the very first bite.

THE CAJUN SHRIMP &

JOLLOF QUINOA BOWL

Ingredients:

  • Cajun Shrimp

    • 1 lb large shrimp, peeled & deveined

    • 1 tbsp olive oil

    • 1 tbsp Cajun seasoning

    • ½ tsp smoked paprika

    • 1 clove garlic, minced

    • Pinch of salt & pepper

  • Jollof Quinoa

    • 1 cup quinoa, rinsed

    • 2 cups vegetable broth (or chicken broth)

    • 1 small onion, finely chopped

    • 1 red bell pepper, chopped

    • 1 can (14 oz) diced tomatoes

    • 2 tbsp tomato paste

    • 2 garlic cloves, minced

    • 1 tsp smoked paprika

    • 1 tsp cayenne pepper (adjust to heat preference)

    • 1 tsp thyme

    • 1 tbsp olive oil

    • Salt & pepper to taste

  • Vegetables & Garnish

    • 1 zucchini, sliced and sautéed

    • 1 cup cherry tomatoes, roasted

    • Fresh parsley, chopped

    • Lemon wedges, for serving

  1. Prepare the Jollof Quinoa: Heat 1/2 tablespoon of olive oil in a medium saucepan over medium heat. Add the diced onion and cook for 3-4 minutes until softened. Stir in the minced garlic and tomato paste and cook for 1 minute until fragrant.

  2. Add the crushed tomatoes, vegetable broth, paprika, cayenne pepper, salt, and black pepper. Bring to a simmer, then stir in the rinsed quinoa. Reduce heat to low, cover, and cook for 15-20 minutes, or until the liquid is absorbed and the quinoa is fluffy.

  3. Cook the Shrimp & Vegetables: While the quinoa cooks, preheat a large skillet over medium-high heat. Toss the shrimp with Cajun seasoning.

  4. Add 1 tablespoon of olive oil to the hot skillet. Add the diced zucchini and cook for 3-4 minutes until tender-crisp. Add the halved cherry tomatoes and cook for another 2-3 minutes until they start to soften.

  5. Add the seasoned shrimp to the skillet and cook for 2-3 minutes per side, until pink and opaque.

  6. Assemble the Bowls: Divide the prepared Jollof quinoa between two serving bowls. Top with the cooked shrimp, zucchini, and roasted cherry tomatoes. Garnish with a sprinkle of fresh chopped parsley and a fresh squeeze of lemon juice over the entire bowl.

  7. Serve immediately and enjoy!
