But as Chef Neph, I’ve always loved taking familiar dishes and giving them a bold, unexpected twist. That’s exactly why the Cajun Spice Oatmeal Bowl is one of my favorite creations. It transforms a simple, everyday breakfast into a savory, soul-warming dish packed with flavor and character.

1 cup rolled oats
2 cups coconut milk (or almond milk)
1 tbsp brown sugar or honey
½ tsp ground cinnamon
¼ tsp ground nutmeg
¼ tsp ground allspice
Pinch of salt
Toppings (customize to taste)
Fresh mango slices
Pineapple chunks
Toasted shredded coconut
Banana slices
Chopped pecans or almonds
Drizzle of honey or maple syrup
Directions:
Combine Ingredients: In a small saucepan, combine the rolled oats, milk, cinnamon, nutmeg, ground cloves (if using), brown sugar (or maple syrup), vanilla extract, and salt.
Cook the Oatmeal: Bring the mixture to a gentle boil over medium heat, stirring occasionally.
Simmer and Thicken: Reduce the heat to low and simmer, stirring frequently, for 5-7 minutes, or until the oats are cooked through and the desired thickness is achieved. If you prefer a thinner consistency, you can add a little more milk.
Transfer to Bowl: Pour the warm oatmeal into your favorite breakfast bowl.
