THE SOUTHERN BRAISED
SHORT RIBS
& GARLIC MASHED POTATOES

Yields: 4 - 6 servings
Ingredients:
Short Ribs & Gravy
3–4 lbs bone-in beef short ribs
2 tbsp olive oil
1 large onion, chopped
2 carrots, chopped
2 celery stalks, chopped
4 garlic cloves, minced
2 tbsp tomato paste
1 cup red wine (or beef broth)
3 cups beef broth
2 sprigs fresh thyme
2 sprigs fresh rosemary
2 bay leaves
Salt & black pepper, to taste
Garlic Mashed Potatoes
3 lbs Yukon Gold potatoes, peeled & cubed
4 garlic cloves, peeled
½ cup butter
½ cup heavy cream (or milk)
Salt & pepper, to taste
Sautéed Green Beans
1 lb fresh green beans, trimmed
1 tbsp butter or olive oil
2 garlic cloves, minced
Pinch of salt & pepper
Directions:
Prepare the Short Ribs: Preheat your oven to 325°F (165°C). Pat the short ribs dry with a paper towel and season them generously with salt and pepper. In a shallow dish, dredge the ribs in the flour, tapping off any excess.
Sear the Short Ribs: Heat the vegetable oil in a large Dutch oven or oven-safe pot over medium-high heat. Sear the short ribs in batches for 3-4 minutes per side, until a deep brown crust forms. Remove the ribs and set them aside.
Sauté the Vegetables: Add the chopped onion, carrots, and celery to the same pot. Cook for 5-7 minutes, scraping up any browned bits from the bottom of the pot. Add the minced garlic and tomato paste, and cook for another minute until fragrant.
Braise the Ribs: Pour in the red wine, scraping the bottom of the pot to deglaze. Bring to a simmer and cook for 2-3 minutes to reduce slightly. Add the beef broth, rosemary, thyme, and bay leaf. Return the seared short ribs to the pot. The liquid should come halfway up the sides of the ribs.
Cover the pot and transfer it to the preheated oven. Braise for 3 to 4 hours, or until the meat is incredibly tender and easily pulls away from the bone.
Make the Garlic Mashed Potatoes: About 30 minutes before the ribs are done, place the potatoes and garlic cloves in a large pot. Cover with cold, salted water and bring to a boil. Cook for 15-20 minutes, or until the potatoes are tender when pierced with a fork. Drain well.
Return the potatoes and garlic to the pot. Add the warm heavy cream and softened butter. Mash with a potato masher or an electric mixer until smooth and creamy. Season with salt and pepper to taste.
Sauté the Green Beans: While the potatoes are cooking, heat the olive oil in a skillet over medium heat. Add the minced garlic and cook for about 30 seconds. Add the trimmed green beans and a pinch of salt and pepper. Sauté for 5-7 minutes, or until the green beans are tender-crisp.
Serve: Remove the braised short ribs from the oven. Discard the rosemary, thyme, and bay leaf. You can serve the short ribs as they are, or strain the gravy for a smoother consistency. Serve a generous portion of the tender short ribs and rich gravy over a bed of the creamy garlic mashed potatoes, with the sautéed green beans on the side.
